WHAT EQUIPMENT DO I NEED?

  • 1 saucepan
  • 1 hand blender or food processor

INGREDIENTS

  • 5 large carrots, peeled and roughly chopped   
  • 1/2 large onion, roughly chopped
  • 900 ml (1 1/2 pints) vegetable stock
  • large bunch fresh coriander, roughly chopped

HOW TO COOK

  1. Heat oil in large saucepan over medium heat
  2. Throw in carrots and onion cook for few minutes until onion has softened a little.
  3. Pour in vegetable stock add some coriander. Bring to the boil and cook until carrots are tender.
  4. Remove from heat and allow to cool slightly.
  5. Puree soup until smooth using hand blender or food processor.
  6. Reheat and serve with crusty bread.
  7. Add a swirl of fresh cream to taste.
