Although you have to watch the rice as it absorbs the stock there really isn’t anything more complicated to this satisfying dish.

WHAT DO I NEED TO KNOW? 

  • Preparation ca 15mins, mostly chopping time
  • Cooking time about 30 mins until rice is cooked
  • Serves 2
  • Cost about £5.00 (depending on cost of prawns which can vary)

WHAT EQUIPMENT DO I NEED?

  • You will need a large saucepan
  • Measure the packet soup in a pint jug
  • Have two bowls ready to serve.

INGREDIENTS

  • 1 packet ready cooked prawns
  • 1 stick of celery chopped
  • 1 leek chopped
  • 1 /2 cup frozen peas
  • 1 packet of vegetable soup made up to 1pint with boiling water
  • 3 cups of risotto rice
  • Oil for frying
  • Parmesan cheese for serving

HOW TO COOK

  1. Gently fry celery and leeks until soft.
  2. Add the rice and add half the stock slowly and wait until it is absorbed. 
  3. Add the rest of the stock and peas. 
  4. When the rice is cooked add the prawns and cook until the prawns are heated through. 
  5. Serve sprinkled with Parmesan cheese.
